Won Ton Cups



Won ton wrappers were something I have wanted to try for a long time, but didn’t really know what I would or could do with them. I finally took the plunge and bought a package. What I came up with became a fun and easy dinner that was different from the usual breads and tortillas that I usually use with my meals.


The ideas for the fillings are endless, but here is a quick run-down of what I mixed up to put into these crunchy cups. I pre-made all of the fillings before baking the cups so everything would be ready to go!


Chicken Salad
• 1 can cooked chicken
• 1/2 bell pepper chopped
• 1 cup corn
• Cilantro
• Salt
• Pepper
• Mayonnaise

Mix together the ingredients and chill until ready.



Guacamole
• 3 avocados
• 1 lemon, juiced
• Diced bell peppers
• 1 cup corn
• Salt
• Pepper
• Cilantro

Save one of the avocado pits to place in the center of the bowl. Smash the avocados and stir the rest of the ingredients together. Chill in the refrigerator until ready to serve.



Apple Cinnamon
• 2 small granny smith apples
• 1 tbsp. brown sugar
• 1/2 tsp. cinnamon
• 2 tbsp. water
• 2 tbsp. butter
• (optional) Cream cheese frosting

Cook slowly so the apples soften and a caramel forms. Briefly cool before placing into cups. I placed a dollop of cream cheese frosting in the cup before putting the apple cinnamon mixture on top.



Now to the cups!

What you’ll need:
• Package of won-ton wrappers.
• 1-2 mini muffin tins. A regular size muffin tin would work, but the result creates much larger cups.

Yield: This recipe made 24, but could make the entire package of won-ton wrappers.

Oven prep: Bake at 350˚


Directions:
1. Thaw the won ton wrappers until room temperature.

2. Brush one side of the won ton wrapper with canola oil.

3. Place the won ton wrapper (with the side with the canola oil down) into the mini muffin tins.
Slightly form and press the wrapper into the tin to mold into a cup shape.

4. Bake at 350˚ for 10-14 minutes, or until cups are golden brown.

5. Remove the won ton cups from the oven and cool for a few minutes before transferring to a plate.

6. Fill with desired fillings!
