This is an easy recipe I use when I want a quick, filling meal. It’s also great to make ahead for lunch the next day. I also make this whenever I need to use up some vegetables, which can be chosen to your liking. My favorite veggie to use is edamame, but I didn’t have any around this time.
What You’ll Need:
• 2 cups instant white rice, cooked
• 1 red pepper
• 1 yellow pepper
• 1/2 white onion
• 1 cup chopped mushrooms
• 1 cup diced Canadian bacon or turkey bacon (my favorite to use is hickory smoked uncured turkey bacon)
• 1 1/2 tbsp. canola oil
• (optional) Sweet chili sauce
* Additional options that I also like really like to add are pineapple or edamame, but it is really up to you what kind of vegetables you like! You can also add soy sauce, which will help get a darker golden brown, but I do find it gets a bit too salty, so often don't use it.
Directions:
1. Cook your rice and set aside when finished.
2. While the rice is cooking, chop your peppers, onion, mushrooms, and meat.
3. Heat a skillet with the canola oil and sauté the vegetables until tender.
4. Add the meat to the vegetables and cook on low heat.
5. Once the meat is cooked, pour the rice into the mixture and stir completely.
7. Place rice into a bowl and top with sweet chili sauce (my favorite is from Trader Joe's!) if desired. Enjoy!
