Gum Drop Popcorn Cake



This simple “cake” recipe is one of my favorite treats to make. It is a combination of a popcorn ball and a Rice Krispie treat. I tend to make it around the holidays with red and green gum drops, but it is a great treat year-round. I think that fruit slices taste the best, since they give them an unexpected fruity pop of flavor. What’s so great about this snack is that it doesn’t require any cooking and requires little effort.

What You’ll Need:
• 1 1/2 bags popped plain popcorn
• Gum drops (the gummy fruit slices work well) or spice drops
• 1 bag of marshmallows
• 1/2 stick unsalted butter
• (optional) Peanuts



Directions:
1. Pop your popcorn.



2. Cut your gum/spice drops into smaller pieces. 



3. Melt your marshmallows and butter in the microwave for a minute. Stir and then do 30-second intervals until fully melted and combined. 



4. Pour the melted mixture over your popcorn and stir. Add gumdrops and optional peanuts  and fully combine. 



5. Pour mixture into a buttered 9” x 13” pan. Allow to cool. Finally, cut into squares and enjoy!
