Fudgy Vanilla Pie


I made this super easy pie for Mother’s Day weekend, and as soon as a bite of it hit my mouth, it instantly became my new favorite pie. I don’t have pie very often, but I have alway been more fond of cream pies over fruit pies. Every so often a piece of chocolate french silk pie is just the best! 

I used a recipe I found on Pinterest for an eclair pie as my foundation for this pie, but changed it up with a few different ingredients. The vanilla center of the pie truly tastes like the delicious cream you would find stuffed into an eclair, which really makes the pie so unique and decadent.

To make the pie even more flavorful, I added two layers of chocolate fudge as well as some chocolate shavings on top. It really was one of the best pies I have ever made (or eaten for that matter), and I can’t wait until I find an excuse to make it again! I think if you were in a very chocolatey mood, you could exchange the vanilla pudding mix to be a chocolate pudding mix.


What You’ll Need:
• Frozen pie crust
• Jar of hot fudge
• One package of instant vanilla pudding mix (3.4 oz)
• 3/4 cup heaving whipping cream
• 1/3 cup milk
• 1/4 cup sour cream (I used light)
• 1/4 tsp vanilla extract
• Whipped topping (I used light Cool Whip)
• Chocolate bar/chips for shaving

Directions:
1. Bake your crust according to instructions on package. It is a good idea to poke the crust before baking with a fork to prevent the crust from puffing up/bubbling too much. After your crust is baked, cool it completely before beginning to mix together the filling.

2. Combine the dry pudding mix, heavy cream, sour cream, and vanilla into a medium sized bowl. Use a mixer to blend everything together until completely combined and creamy.


3. Warm your jar of hot fudge for about 30 seconds in the microwave and use a spoon to evenly spread on a thin layer onto the bottom of your pie crust.


4. On top of your hot fudge layer, spoon all of your vanilla pudding mixture. Spread it around evenly and as smoothly as you can.



5. With your pudding layer finished, add a second layer of hot fudge. You may need to warm up your jar in the microwave again.


6. On top of the fudge, dollop about a cup of whipped topping on top and spread it around until smooth.


7. To finish up the pie, use a grater to shave some chocolate on top. (I only had dark chocolate chips at the time, so I carefully shaved them into a small bowl before sprinkling on top of the pie).
