Caramel Cinnamon Peanut Butter Microwave Cookie



Baking is one of my favorite activities. Since I have a small family though, many treats go wasted because of the size most recipes create. Even cutting a cookie recipe in half still creates a few too many cookies for just a few people to consume. One of my favorite ways to get my sweet fix, in a much smaller size, is by individual microwavable desserts. They are so easy to quickly mix up a treat for a person or two, and a basic recipe can easily be transformed into something more unique by adding a few special toppings. This caramel cinnamon peanut butter microwave cookie is one of my concoctions!


My trick is to mix everything together in a bowl instead of right in the dish I will microwave. This allows for a bit more room to stir and makes a smaller mess.

What You’ll Need:
• 1 tbsp. butter
• 1 1/2 tbsp. creamy peanut butter
• 1 tbsp. brown sugar
• 1 tbsp. granulated sugar
• Splash of vanilla
• Pinch of salt
• 1 tsp. cinnamon
• 1 egg yolk
• 3 tbsp. flour
• Whipped cream

• Caramel sauce
• Cinnamon chips (see below)



Directions:
1. In a small bowl, melt the peanut butter and butter together in a microwave for about 30 seconds. 

2. Combine the sugars, salt, vanilla, and cinnamon to the mixture and stir completely.

3. Add the egg yolk and stir again. 

4. Mix the flour into the mixture. You will now have a thick, crumbly, cookie dough-like texture.




5. Finally, add a sprinkling of cinnamon chips to the dough. Use a spoon to place the mixture in the bowl you will microwave and push it firmly down with the spoon.



6. Heat the mixture in a microwave for about 45 seconds. The cookie will be quite hot when finished, so allow a few minutes to cool. Top with whipped cream and drizzle with caramel sauce. Best served warm.
