One of my mom’s favorite treats are scones, and we have tried quite a few recipes over the years. Our favorite scones are the more traditional British scones with jam and clotted cream. The style of scones in America though can sometimes be more dry, but I’ve noticed that if there is sour cream in the ingredients, they come out more moist. We used a recipe recently to make orange scones and I was really pleased with how they turned out. I thought of other ways you could adapt the recipe and my first thought was to make a strawberry limeade or lemonade flavor. So, I came up with these using fresh and colorful limes and strawberries, which goes perfectly alongside a cup of fruity summer tea.
Pan: A cookie sheet or similar, with parchment paper lining the pan
Oven prep: Bake at 350˚ F
What You’ll Need:
Scone Dough:
• 1 3/4 cup flour
• 4 tsp baking powder
• 1/4 cup sugar
• Zest of 1 lime
• 1 dup of strawberries (washed and diced into small chunks)
• Pinch of salt
• 5 tbsp cold unsalted butter, cut into cubes
• 1/2 cup freshly squeezed lime juice
• 1/4 cup sour cream
Lime Glaze:
• 1/2 cup powdered sugar
• 1 tablespoon lime juice
• Left over lime zest
Directions:
1. Begin your dough by whisking together the flour, baking powder, sugar, lime zest, and salt into a large mixing bowl. You may want to set aside some of the lime zest for the tops of the scones.
2. Add your butter to the dry ingredients, and use your hands or a pastry tool to fully combine the mixture. It will be done when it turns crumbly with small chunks.
3. Stir the lime juice and sour cream in a small bowl until blended. Add the liquid to the dry mixture, and mix together to combine. Be careful to not overmix though, or you scones will not be as moist and soft.
4. To finish up the dough, add your diced strawberries and gently stir them around until they are scattered throughout the mixture.
5. Roll your dough into balls, creating about 10-12 scones. Lay them on your cookie sheet, and slightly flatten them. They should be about 2 inches each.
6. Bake your scones for 12 minutes, or until the tops turn a soft golden brown.
7. Remove from oven, and allow your scones to cool before adding the glaze on top.
8. To create the glaze, combine powdered sugar and lime juice into a small bowl. Feel free to sprinkle in any additional lime zest. Mix until you have a thin and smooth consistency. You can add more juice if it is too thick.
9. Lightly drizzle the glaze over your scones and enjoy!
