Creamy Avocado Dip



Now with the summer season finally here, this dip has easily become one of my favorites. Just like guacamole, it is very simple and easy to make. What sets this recipe apart is the creamy texture provided by cream cheese and the soft sweetness of sundried tomato pieces. Together the ingredients blend to create a wonderfully smooth pop of flavor. This dip is incredibly delicious to enjoy with vegetables, chips, or fries. It is also works as a terrific sandwich spread!


Ingredients
• 1/2 red onion
• 3 avocados
• 1/2 lemon
• 1/2 cup cream cheese
• 1/4 cup sundried tomatoes
• 1 stalk green onion


Directions
1. Chop red onions, green onions, and sundried tomatoes into small bite-sized pieces.

2. Remove seeds from avocados and mush the avocado in a large bowl.

3. Add cream cheese into large bowl and mix thoroughly with avocados. Can use a food processor to completely blend.

4. Squeeze lemon juice into the bowl. Add the chopped red onions, green onions, and sundried tomatoes and combine thoroughly.
