Tantalizing Tuna Burgers



This tuna burger is one of my favorite dishes because it is simple and quick to make, but is also so  delicious and filling. It also acts as a great way to eat more vegetables! My favorite vegetables to include are carrots, corn, and portobello mushrooms. The crunch of the corn and carrots makes for a brilliant sensation. What makes this recipe even more amazing is that you could easily add the vegetables you prefer.


Yield: 4-6 servings



Ingredients
• 1/4 cup chopped onion
• 3/4 cup corn
• 3/4 cup shredded carrots
• 3/4 cup portobello mushrooms diced
• 1 tbsp. chopped cilantro
• 1 egg
• 2 cups bread crumbs
• 1 can (5 oz.) Albacore solid white tuna (water packed)
• 1/4 tsp. salt
• 1/4 tsp. pepper

Additional: buns, cheese slices, lettuce, tomato, or any other desired toppings


Directions
1. Coat a large nonstick skillet with cooking spray. Sauté onion, mushroom, corn, and carrots until tender. Drain and cool to room temperature.

2. Flake the tuna and slightly beat the egg.

3. In a large bowl, combine the egg, bread crumbs, tuna, salt, and pepper.

4. Add the vegetable mixture to the tuna mixture.

5. Using your hands, shape the mixture into roughly 3 1/2 inch. patties.

6. Coat the skillet again with cooking spray. Place patties onto the pan and cook for 3-5 minutes on each side, or until lightly browned.

7. Place on buns and serve with your chosen toppings.
