I concocted these delicious cookies after having a major sweet craving. With a dark chocolate bar lying around, I searched through some old cook books for a cookie base that I would have the ingredients for. The result was delightful! Dark chocolate shavings and oatmeal blend throughout these cookies, which hit the just the right spot. What I really liked was that the batter resulted in a large, flat shape which is my favorite way to have a cookie!
Yield: Approximately 15 cookies
Oven prep: Bake at 350˚
Ingredients
• 1/2 cup butter, softened
• 2/3 cup packed brown sugar
• 1/3 cup confectioners sugar
• 1 egg
• 1 tsp. vanilla extract
• 1 cup all-purpose flour
• 3/4 cup quick-cooking oats
• 3/4 tsp. baking soda
• 1/2 tsp. salt
• 1 dark chocolate bar, finely shaved
• (optional) 2/3 cup additional chips (semi-sweet, milk chocolate, butterscotch, etc.)
Directions
1. Cream together the butter, brown sugar, and confectioners sugar until light and fluffy.
2. Beat in the egg and vanilla.
3. In a separate bowl, combine the flour, oats, and baking soda.
4. Gradually add the flour mixture into the creamed mixture. Mix well.
5. Stir in the dark chocolate shavings and any additional chips.
6. Drop batter in approximately 2-inch circles 3 inches apart onto an ungreased baking sheet.
7. Bake at 350˚ for 14-16 minutes or until golden brown.
8. Cool for 1 minute before removing from baking sheets.
9. Store in an airtight container.

For my cookies, I used one Trader Joe's The Dark Chocolate Lover's Chocolate Bar, which was 1.75 oz. I also had some “springtime” Nestle semi-sweet chocolate chips, which had yellow and pink chips. I removed just the pink chips and poured a few in to add a little pop of color.
