Pumpkin Chip Cookie Dough Balls



A few nights ago I was craving something sweet as I was enjoying an evening of my favorite guilty-pleasure show, Shark Tank. I had purchased a package of Toll House Pumpkin Spice morsels over the weekend, and came up with the idea to use them in one of my favorite snacks: cookie dough balls!

My favorite recipe for making these easy treats is here. What I love about this recipe is that is fills my sweet craving for a few days, without making an overly huge amount that I’ll end up overeating or wasting. I took the recipe and adapted it to make this delicious fall version!


What You’ll Need:
• 3 tbsp. peanut butter
• 2 tbsp. butter, softened
• 1/4 cup light brown sugar, packed
• 2 tbsp. granulated sugar
• 1 tsp. vanilla extract
• 1 tsp. cinnamon
• A dash of nutmeg
• A pinch of salt
• 1/4 cup all-purpose flour
• 2 tbsp. pumpkin spice morsels (if unavailable, cinnamon chips or white chocolate chips would also work well)

Directions:
1. Using a large bowl, combine the peanut butter, butter, and sugars. Mix on high speed until light and fluffy (about 3 minutes.)

2. Add the vanilla and salt. Continue to mix until well combined. Add the cinnamon and nutmeg.

3. With your mixer on low, gradually add the flour until fully blended. The mixture will turn into a dough at this stage and may look a bit crumbly.

4. Fold in the pumpkin chips by hand. Be careful to not add too many chips, or it will become harder to roll the dough into balls. The original recipe used mini chocolate chips, and this recipe uses the regular size. You could also wait until after rolling the dough into balls, and press a few chips into the top.

5.  Form the dough into about 1-inch diameter balls. This may require some kneading and molding, but the finished result will be beautiful round delights! My batch made 7 dough balls.

6. Refrigerate for a few minutes before serving to set the dough a little. Serve soon after or cover with plastic wrap and eat within a few days. It pairs wonderfully with a cinnamon spice tea!
