To start of the new month, I wanted to share three very quick sandwich recipes, starting today with one of my favorites. I make a lot of sandwiches on nights when I am feeling a bit more lazy or just want something fast to put together. A loaf of bread and a few ingredients can go pretty far during one week, and I enjoy putting together new little creations that are more inventive than just a basic sandwich or plain grilled cheese. This one is a cheese and fruit mixture that reminds me of some holiday-themed sandwiches I have had in recent years. Speaking of holidays, this sandwich would also be good with some leftover turkey from Thanksgiving or Christmas. Many different fruit spreads can also be tried out to find a combo you like!
Pan: A cookie sheet or similar, with tin foil or parchment paper lining the pan.
Oven prep: Turn on and preheat your oven broiler on high or low, depending on your preference. You can also use a sandwich press or a toaster oven if you prefer.
What You’ll Need:
• Bread slices
• Cheese slices (gouda or brie is my favorite with this combo)
• One pear, sliced thin
• Jam (blueberry, raspberry, or cranberry spread works well)
Directions:
1. Lay down a bottom bread slice onto your lined pan.
2. Begin to lay down your ingredients, starting with spreading your jam or fruit spread onto the bread (I used Trader Joe's Organic Blueberry Preserves for this), putting more or less depending on how much you desire.
3. On top of the jam, layer your sandwich with some of your pear slices and pieces of cheese (I used gouda slices).
4. Put your other slice of bread on top of your layers, and gently press down.
5. Place your pan into your preheated oven, and bake until the bread on top starts to brown and feels crisp to the touch. Carefully take your pan out of the oven, and turn your sandwiches over. Return the pan back to the oven to allow the other side to toast and turn golden, making sure you cheese is melty before you take it out to eat.
6. With your sandwich warm and toasted, serve immediately and enjoy!
