Sweet Potato Tater Tot Casserole




I came up with this recipe after I spotted sweet potato tater tots (well, actually they are sweet potato puffs.) One of my favorite casseroles is the traditional tater tot casserole, and I thought using the sweet potato tots would be a fun way change up the usual. The result was really tasty, and quite colorful. Here is how I did it!

Pan: Casseorole dish
Oven prep: Bake at 375˚


What You’ll Need:
• Sweet potato tater tots (I used a little over 1/2 a bag, but use to your liking and size of your dish)
• 12 oz frozen corn (I used mixed white and yellow corn for more color)
• 1/2 pound ground turkey or beef
• Tbsp olive oil
• Salt and pepper
• 10.5 oz cream of chicken or cream of mushroom soup
• 1/2 cup milk
• 1 cup cheese (I used mild cheddar)


Directions:
1. Pour your olive oil into a pan and brown your ground meat over the stove on medium heat. Season with salt and pepper. For more flavor, you can also add some chopped onions.

2. Pour your soup into a small bowl and add the 1/2 cup of milk. Mix until combined.

3. Begin to layer your casserole by putting the cooked meat on the bottom. Then add the corn, followed by pouring the soup mixture over the meat and corn. Sprinkle the cheese over the soup mixture, and finally add your tater tots on top. 







4. Bake the casserole at 375˚ for 45 minutes-1 hour. The tater tots should look crispy and slightly browned.
