Apple Chicken Curry Sandwiches



This sandwich is a take on a regular chicken salad. I really like chicken and curry put together, and when I had something similar at a sandwich shop (The Smiling Moose) and wanted to re-create it. What I really like about this sandwich besides the warm curry flavor is the sweet crunch of the apples and pecans. It is quite easy to make and is a perfect sandwich update to have as the weather warms up.


What You’’ll Need:
• 1 can of premium chunk chicken breast (I used a 12.5 oz can, which makes 24 sandwiches, depending on size you want)
• Mayonnaise or Miracle Whip
• Curry powder
• Honey
• 1 small apple (I used gala)
• Chopped pecans
• Bread, pitas, tortillas, or whatever you want to put your salad on.

Directions:
1. Begin by draining your chicken. Once all the wetness is out, place the chicken into a medium sized bowl and use a fork to smash the chunks together.



2. With the chicken smashed, add your mayonnaise/Miracle Whip. I usually just eye the amount I put, but I would say I add about a 1/2 cup. Once added, stir it into the chicken until all is coated. If it still seems dry, you can add more.



3. Now add the curry powder. I add about a teaspoon to begin with. Stir the curry into the mixture. It should turn a nice yellow color. You can taste it to see if you want more curry flavor.



4. Drizzle a little bit of honey and stir it into the mixture.

5. Chop your apple into small chunks. I usually keep the skin, but it is up to you what you prefer. If your apple is larger, you may not be able to use it all (so enjoy a few slices while you prepare it!). Add your apple chunks and stir. 



6. Finally, add a sprinkle of chopped pecans and stir again. Once blended well, put the salad onto your favorite bread and serve.
