The past couple days I shared two super easy recipes for a Melty Pear Jam Sandwich and a Cheddar Apple Grilled Cheese, and today I am back with one more idea. I had the best tuna sandwich ever four years ago in London, while I was at the Warner Brothers Studio Tour: The Making of Harry Potter. I can’t really explain why it was so good (and maybe I was starving at the time, which influenced my feelings for it), but I still talk about how much I loved it. It was pretty basic, nothing overly fancy, but the corn was such a good addition that I never really thought of adding to tuna, and it just added the perfect bit sweetness and crunch, really improving on a normal tuna sandwich. Here is how I re-create it at home, with the addiction of a little bit of sliced cheese.
Pan: A cookie sheet or similar, with tin foil or parchment paper lining the pan
Oven prep: Turn on and preheat your oven broiler on high or low, depending on your preference. You can also use a sandwich press or a toaster oven if you prefer.
What You’ll Need:
• Bread slices
• Can of corn
• Can of white albacore tuna
• Mayonnaise (I have currently been using Kraft Mayo With Olive Oil)
• Pinch of salt and pepper
• Cheese Slices (I used a sharp cheddar)
• (optional) Pinch of basil
• (optional) Diced peppers and/or diced onion
• (optional) Spinach leaves
Directions:
1. To begin your tuna mixture, open your canned tuna and drain it of any liquid. Spoon it into a bowl and stir a bit to break up the tuna.
2. Add about 1/4 cup mayonnaise, stirring it into the tuna thoroughly. Season with salt and pepper. I also added a bit of basil. If it is still too dry, you can adda bit more mayo. You can also stir in diced peppers and/or diced onions for more crunch and flavor.
3. Open and drain your canned corn and add as much as you want to your tuna. I usually start with about a 1/2 cup.
4. Lay down a bottom bread slice onto your lined pan.
5. Scoop a portion of the tuna mixture onto the bread and pat it down. Add enough to fill the bread, depending on how much you desire.
6. On top of the tuna, add a slice of cheese. You can also add a few spinach leaves. Put your other slice of bread on top of your layers, and gently press down.
7. Place your pan into your preheated oven, and bake until the bread starts to brown and feels crisp to the touch. Carefully take your pan out of the oven, and turn your sandwiches over. Return the pan back to the over to allow the other side to toast and turn golden, making sure you cheese is melty before you take it out to eat.
8. With your sandwich toasted, serve immediately and enjoy!
